Rosso Salento IGT
GRAPES: Susumaniello
Vine of supposed Dalmatian origin, maybe its ephitat “susumaniello” comes from “loaded as a donkey”, thanks to its peculiarity to be a particularly productive in juvenile age. In its maturity stage, about 10 years after, its productivity reduces in a considerable way. Medium-size grapes, with a very velvety blue-coloured peel, that mature in the first half of September. Susumaniello grapes are rich in sugar, with a good acidity content, with more than the double of antociani contained in the Negroamaro and an high extracting index. Grapes are harvested in the first half of September, picked up by hand and put into boxes. The maceration takes place in horizontal rotative thermoregulated tanks. The wine is then transferred into barrels for 6 months.
TASTING NOTES: Red and dark ruby coloured. Its scents explode through prune smells, red berries and blackberry jam. In mouth, it appears with a full-bodied and strong structure.
ALCOHOL CONTENTS: 13,5%.
SERVING TEMPERATURE: around 16-18° C.
SERVING SUGGESTION: It goes well with red meat, game and ripe cheese.
